Catalina Chicken.
Trust me. It is good.
Take some chicken breasts- maybe four, up to six. Cut them into strips. Take a baking pan. Put chicken into pan. Pour on one whole bottle of catalina dressing (about 16 oz). Mix in half that amount of apricot jam (about 8 oz) and a package of dry onion soup mix. Bake chicken in sauce at 350 for about 45 min or until chicken is cooked and sauce is thicker. Serve over rice. It sounds gross but it is delicious.

another chicken dish - mix some goat cheese and butter with herbs (parsley, tarragon, basil, oregano). get some chicken breasts and slice them lengthwise. stuff with cheese. dip in a beaten egg, cover in bread crumbs. pan fry both sides and then bake for i think half an hour.
another easy dish - pasta with hot italian sausage. brown the sausage first, remove, saute onions and garlic in the oil from the sausage. throw in fresh tomatoes, fresh basil, a third of a can of chicken broth, a pinch of saffron, a pinch of those hot pepper flakes. simmer covered until thickened. toss in sausage for 5 min. sprinkle with fresh basil. toss in pasta (bowtie or spirals preferably).
